Patrick's Crostini
These are delicious and easy!
Slice a French baguette, at a slight angle, into 20 one-inch pieces. Toast for 20-minutes at 300 degrees on the middle shelf of your oven until golden-brown. While the bread is toasting, rinse and drain one 16-ounce can of garbanzo beans. Place in a food processor and pulse, adding a drizzle of olive oil until the mixture is silky smooth and of spreadable consistency. Dice one red onion and one medium tomato and toss with a little olive oil. Spread the bean paste on the toast and top with a spoonful of the tomato and onion mixture. Add a smidgen of parsely, if desired. Serve immediately.

Individual-sized bags of Fritos
Heated Mexican-spiced black beans
Shredded cheese
Optional: Taco meat, chopped tomatoes, chopped onions, sliced black olives, salsa, et cetera.
You can add or subtract pretty much anything in this recipe. Open the Fritos' bag at the top to release the air, then squeeze the bag to crush the Fritos into smaller pieces. Add one scoop of warm beans, some cheese, and whatever else you choose. Mix with a plastic fork and eat out of the bag!

1 cup chopped onion
2 cans (1-pound 15-ounce) pork and beans
1 can (1-pound) kidney beans, rinsed and drained
1 can (1-pound) butter limas, rinsed and drained
1 cup ketchup
1/4 cup brown sugar
1 tablespoon liquid smoke
3 tablespoons white vinegar
1 teaspoon salt pepper to taste
Brown ground beef, bacon, and onions in skillet; drain off fat and place in crock pot (be sure it's not too hot for the crockery). Add remaining ingredients and stir well. Cover and cook on low 4 to 9 hours.

Three Bean Salad
Always a favorite!

1/2 teaspoon pepper
2/3 cup vinegar
1 teaspoon salt
3/4 cup sugar
1 can green beans, French cut or whole, drained
1 can yellow beans, French cut or whole, drained
1 can kidney beans, rinsed and drained
1/2 green pepper, diced
1 small onion sliced thin
Mix oil, pepper, vinegar, salt, and sugar and let stand while preparing remaining ingredients. Add the vegetables to the oil mixture and marinate for four hours or more. Drain and serve.
